Cabbage Soup

Cabbage is a source of beta carotene, vitamin C, fiber, and the anti-cancer compounds indole-3-carbinole (I3C) and sulphoraphane. Cabbage has been shown to reduce the risk of some cancers, especially colorectal. I3C is known for its anti-carcinogenic activity and its ability to boost DNA repair in cells.

Cabbage Soup Recipe

8 cups Vegetable Stock
1/2 head of cabbage, approximately 4 cups
2 onions, diced
2 garlic cloves, minced
4 celery stalks, sliced
2 carrots, sliced
2 cups chopped green beans
1 leek, white part only, washed and sliced
5.5 ounce can tomato paste
28 oz. can of tomatoes, chopped
1 tsp basil
2 tsp oregano
1/2 tsp kelp powder
2 tbslp chopped fresh parsely
1 tomato, chopped
sea salt to taste

1. Combine all the ingredients, except the sea salt, in a large pot and bring to a boil.

2. Reduce the heat, cover, and simmer until the vegetables are tender.

3. Season to taste with sea salt.
